Have you visited Dominque Persoon's chocolate shop, The Chocolate Line in Bruges? I discovered his store on my last visit to Bruges in 2018 and it was on my list to drop into again for this trip.
It's right in the hub of Bruges and with smart chocolate and gold exterior not easy to miss. Walk inside and you will be confronted by his iconic gold Landrover, well half to be precise, which is attached to the wall on the left, with his chocolate makers straight creating chocolates behind a glass screen. On the right hand side is his bean to bar chocolate kitchen where he makes his small batch bean to bar chocolate bars. Frustratingly I am still yet to catch him there - another time!
Dominique Persoon and his partner, Fabienne Destaercke, set up the shop in 1992 and in 2004 were included in the Michelin guide which is rare for chocolatiers and chocolate shops. He has also written two books Cacao: Expedition in Mexico, the Roots of Chocolate and Shock-latier and passionate about the origins of cacao and its effects on the brain.
One commission which came his way was from the wives of The Rolling Stones which was to design a device which would shoot chocolate powder up their noses!
The bulk of his chocolate creations are from covertures which he sources the cacao beans for and gets a chocolate company in Belgium to turn them into couverture. He also though has a very small line of chocolate bars 'Tree to Bar' which he makes in house.
